Hot Chia Porridge

What a wild few weeks! We were hit by big storms in Tassie and our home and office were without power for 6 days. It was a challenge keeping on top of work during this time, but I feel like I am finally coming out of the catch-up phase. 😅 Thanks for your patience if you were waiting on a reply to an email or DM during this time.

We had another fabulous Sheila May photoshoot last week - I am constantly blown away by how upbeat and enthusiastic my beautiful models are at each of our photoshoots. We were blessed with a sunny morning, but the air was fresh and the wind was high! This new collection will be launching in about 2 weeks time - you are going to LOOOOVE it!

This week I am going to be introducing you to our TWO new bottom styles. I can't wait to hear what you think about them!! One of these styles has been requested by the one and only Nat Angel - she is going to be doing a try-on for us in a couple of weeks and I know they are going to sell like hot cakes!

Thanks to everyone who helped us celebrate reaching 20K followers on Instagram this week. I don't usually make a fuss about achievements like that as I try to keep Sheila May Swim more focused on building a beautiful community and listening to our customers rather than pushing for more likes and follows. However, this milestone really is a testament to how many supportive, caring, like-minded women we have in the Sheila May Swim community. I truly am grateful that you choose to spend a pocket of your time with me.

P.S. We have been eating this delicious Hot Chia Porridge on repeat...it's so tasty and keeps me full until the afternoon!

HOT CHIA PORRIDGE
1/2 cup almond milk
1.5 Tbs chia seeds
1/2 Tbs almond butter
1 1/2 Tbs coconut flakes
1/2 tsp cinnamon
1 tsp vanilla
pinch salt
1/2 banana, sliced
1/2 Tbs pumpkin seeds
1/2 Tbs flaked almonds
1 1/2 Tbs *berry compote

To make porridge, combine almond milk, chia seeds, almond butter, coconut flakes, cinnamon, vanilla and salt in a small saucepan. Cook over medium heat, stirring occasionally. Remove from heat once it has thickened and chia seeds are soft (3-5 minutes).

To serve: place porridge in bowl, top with banana, pumpkin seeds, almonds and berry compote.

*You can make a quick berry compote while the porridge is cooking. Pop a handful of frozen berries and 1/2-1 Tbs coconut sugar in a bowl or mug. Cook in the microwave for a couple of minutes until soft.
