You know that feeling…it happens every year.
A few too many hot cross buns.
Chocolate eggs for breakfast, lunch and dinner (no judgement here).
And suddenly your body pleading for a vegetable!
This is the salad I always come back to.
It was shared with me by a friend years ago, and it’s been my go-to ever since - especially after a few days of treats when I’m craving something fresh, nourishing, green and earthy.
I love this salad because it's packed with crunchy, fresh goodness. It doesn't look like much, but is actually full of flavour. It keeps you full for aaaages and is so easy to throw together.
And best of all?
It keeps really well in the fridge...which means future you will be VERY grateful.
Also (and this is important) it’s not exactly a crowd favourite with kids or snacky husbands… so there’s a very good chance this one is all yours, haha!
And it has one secret ingredient that I would never have though to throw into a salad - Medjool dates!
Trust me on this one.
Little bursts of sweetness scattered through all that green goodness - it completely makes the salad!
The Green Reset Salad (serves approx. 4)
No exact measurements needed here - adjust to your taste, this one’s very forgiving.
- 3 handfuls rocket, lightly chopped
- 3 sticks celery, sliced
- 2 handfuls celery leaves, roughly chopped
- 1 handful flat-leaf parsley, roughly chopped
- 1 avocado, diced
- 1/8–1/4 red onion, finely diced
- Handful of walnuts, chopped
- 2 tbsp capers
- 4 medjool dates, pitted + chopped
- 1 tin lentils, drained + rinsed
- Drizzle of olive oil
- Squeeze of lemon juice
- Salt + pepper to taste
Chop everything up and throw it into a big bowl.
(And yes, I do recommend chopping it fairly small. Otherwise it becomes a bit of a jaw workout 😅)
Drizzle over olive oil and lemon juice, season with salt and pepper, toss it all together…Done.
Easter is just around the corner. My top tip is to grab the ingredients now, pop them in your fridge, and thank yourself later.
Because when the sugar high disappears and your body is asking for something fresh, this always hits the spot!
